Betty Crocker Brownies with Peanut Butter Cream Cheese Frosting

There are a few hills I’m willing to die on.  The main one: that all Taylor Swift songs would be 100x better if performed by Britney Spears.  Just imagine it if you will.  Another hill: that it makes far more sense to find a good boxed brownie or cake mix, and to top it with a solid homemade frosting.  Making a cake from scratch is so much work, and we all have better things to do.

My current favorite combo is Betty Crocker Dark Chocolate Brownie mix and Peanut Butter Cream Cheese frosting.


Are you dying yet? Thinking, fuck everything, it’s the holidays, I’m going to gain 10 pounds anyway, get in my mouth?  Samesies.  This is what you do:

Make the brownies, according to package directions.

Once they’re in the pan, lick the scraper clean.  Share with friends.

Let the brownies cool for a few hours once out of the oven.

Easy right? Let’s move on to the frosting.




Peanut Butter Cream Cheese Frosting:

1 8 ounce package of cream cheese, softened

4 tablespoons unsalted butter, softened

1 1/2 cups powdered sugar, sifted

1 teaspoon vanilla extract

3/4-1 cup creamy peanut butter (I used 1 cup)


With whatever fancy mixer you have, mix the cream cheese and butter.

Now add in the powdered sugar and vanilla.

Scrape it all in, making sure it’s mixed well.  Now add the peanut butter.

Frost that brownie like you love it.

Lick the beaters and the scraper, share with your bae.

If you feel like it is necessaary, try one corner brownie to make sure the pan isn’t poisoned.  These are rough times, you never know what could be poisoned, and I know you don’t want your babes to get sick.
